- 3 cloves garlic - minced
- 1 medium medium zucchini - sliced into thin rounds
- 30 ml extra-virgin olive oil - or 2 tbsp
- Salt and black pepper - to taste
- Fresh parsley or basil leaves - for garnish
Instructions
- Bring a large pot of salted water to a boil and cook the fusilli pasta according to package instructions until al dente. Reserve 1 cup (240ml) of pasta water before draining.340 g fusilli pasta

- Add the sliced zucchini to the skillet with the mushroom mixture and cook for an additional 3-4 minutes or until the vegetables are tender but still crisp.1 medium medium zucchini
- Stir in the reserved pasta water, salt, and black pepper to taste. Cook for 1 minute or until the sauce has thickened slightly.Salt and black pepper
- Add the cooked fusilli pasta to the skillet with the vegetable mixture and toss everything together, ensuring the pasta is well coated in the flavorful sauce.
