Ingredients
  

  • 340 g fusilli pasta - or 12 oz
  • 200 g mixed button mushrooms (such as cremini, shiitake, and oyster), sliced - or 2 cups
  • 3 cloves garlic - minced
  • 1 medium medium zucchini - sliced into thin rounds
  • 30 ml extra-virgin olive oil - or 2 tbsp
  • Salt and black pepper - to taste
  • Fresh parsley or basil leaves - for garnish

Instructions
 

  1. Bring a large pot of salted water to a boil and cook the fusilli pasta according to package instructions until al dente. Reserve 1 cup (240ml) of pasta water before draining.

  2. In a large skillet, heat the olive oil over medium-high heat. Add the sliced garlic and cook for 1-2 minutes or until fragrant.

  3. Add the sliced mushrooms to the skillet with the garlic and cook for an additional 4-5 minutes or until they release their liquid and start to brown.
    200 g mixed button mushrooms (such as cremini, shiitake, and oyster), sliced
  4. Add the sliced zucchini to the skillet with the mushroom mixture and cook for an additional 3-4 minutes or until the vegetables are tender but still crisp.

  5. Stir in the reserved pasta water, salt, and black pepper to taste. Cook for 1 minute or until the sauce has thickened slightly.

  6. Add the cooked fusilli pasta to the skillet with the vegetable mixture and toss everything together, ensuring the pasta is well coated in the flavorful sauce.
  7. Serve the Autumn Fusilli with Mushrooms, Garlic, and Zucchini immediately, garnished with fresh parsley or basil leaves.

Notes

Tips and Variations:

  • To add some extra depth of flavor, you can sauté 1-2 tablespoons (15-30g) of chopped prosciutto or pancetta along with the garlic.
  • If you prefer a creamier sauce, you can stir in 1-2 tablespoons (15-30g) of unsalted butter and cook for an additional minute or until melted.
